Off to brine the butt for a few hrs , later I will season the butt for 24hrs to then slow roast the butt for 10hrs before I forknpull the tender butt apart to add saucy goodness.
Mmmmmmm butt, butt assault, this is my new favorite status! 😂

For the last few years, I've been vacuum sealing and freezing after I dry rub them. I let them sit in the freezer a few weeks with the rub inpregnating them, then thaw and low n slow w/ hardwood
